Cooking Tips....Marinated Baked Pork Chops

Checked the freezer for something for dinner and all I had was a package of two boneless 1 1/2" pork chops. What to cook. I wanted something easy and different for a change. After all you can only cook chops so many ways - I have yet to see a cookbook on 365 ways to cook pork--chicken & beef yes but pork no. So I went web searching and found this good and easy way to cook my lonely package of pork chops.


Marinated Baked Pork Chops
       
Servings: 6

Ingredients:
1 tablespoon soy sauce
2 tablespoons vegetable oil
1 tablespoon Worcestershire sauce
1 teaspoon lemon juice
2 tablespoons brown sugar
2 tablespoons ketchup
6 pork chops, trimmed

Directions:
1.         Preheat oven to 350 degrees F (175 degrees C).
2.         In a small bowl, thoroughly blend soy sauce, vegetable oil, Worcestershire sauce, lemon juice, brown sugar, and ketchup.
3.         Place pork chops in a medium baking dish, and spread with 1/2 the sauce.
4.         Bake pork chops 30 minutes in the preheated oven. Turn, and spread with remaining sauce. Continue baking 30 minutes, or until internal temperature of the chops has reached 160 degrees F (70 degrees C).

Serve with rice, vegetables or salad, and rolls.

*****Seeing I only had two chops I still used the amount of sauce thinking I would have left over for chicken some night. However the sauce was just enough for the 2 chops. I added diced onion and then covered the baking dish with foil for the first half of cooking (20 min.). I then removed the foil and poured the remainder of the sauce over the chops and cooked uncovered for the remainder of time (15 min.). Seeing the pork chops were boneless the cooking time was cut.The result was succulent, tender and very tasty Will definitely keep this recipe handy
